1 1/3 cups Sostanza Polenta
2/3 cup plain flour
1 tspn baking soda
½ tspn salt
1 tblspn sugar
2 eggs
1½ cups milk
3 tspns lemon juice
1½ tblspns melted butter


Sift dry ingredients together. In a separate bowl, beat eggs and add milk, lemon juice and butter, then add the dry ingredients gradually, beating until smooth. Pour batter into a jug. Heat and grease frying pan. Pour in enough mixture to make a pancake about 12 cm in diameter. Cook on both sides until golden brown.
