Makes 12 small or 6 large Muffins


½ cup Sostanza Polenta
1½ cups self raising flour
¼ cup sugar
1 egg
½ tspn salt
1 cup milk
1/3 cup oil


Sift flour and salt into a bowl. Add Sostanza Polenta and sugar. Mix. In a separate bowl, combine egg, oil and milk and pour into the centre of the dry ingredients. Gently fold ingredients until combined, making sure not to overmix. Spoon mixture into Muffin tray. Bake in moderate oven for approximately 20 minutes.
